Rye Whiskey Bourbon-Cask Finish 8 Years Old
The Bourbon Sandwich – our inspirational rye has spent time in a sherry cask and we understand how that has changed its spicy and fruity character, but how will it continue to change with more time in a new bourbon cask, this time in Cornwall, like our own rye will be matured in the future? Our first experiment and a solid sign that we are on the right path. This whiskey takes the building blocks of the sherry-finished rye, rounds off the edges and adds classic bourbon cask notes to the fruity and spicy spirit, as well as amplifying both its brown-sugar notes and rich golden colour.

Tasting Notes
Nose
Berry jam leads with a sprinkle of desiccated coconut, a generous pour of vanilla cream and a bar of toffee. Rye bread spread with honey develops, as before, but this time the bread is freshly sliced. Mint and tarragon notes float gently above, with spiciness well integrated.
Palate
Brown sugar, liquorice toffees and cinnamon spice lead, all sat on a pool of blackcurrant jam. Black pepper spiciness builds – tamed with a few drops of water – joined by spearmint and leafy tarragon. Rich caramel notes develop, rolling over into earthiness, brown leaves and anise.
Finish
Cooling mint and anise fade to reveal toffee, green leaves and lingering blackcurrant fruit.
