Cornerstone Rare Cornish Gin

When Cornish chef Tom Brown wanted a gin for his newly opened restaurant – Cornerstone – there was only one distillery to talk to: us. Now, a little further down the line, Cornerstone has a Michelin star and Cornerstone gin is one of our core spirits. It’s packed with Cornish flavour, from Polgoon apple juice from Penzance to locally foraged rowan berries and rosehips, and has a kick of spice from Javan long peppers, but it’s all wrapped around a traditional core of piney juniper.

Tasting Notes

Fruity, but still rich with juniper and traditional gin spices. While Cornerstone makes a great gin and tonic – especially if you garnish it with a slice of apple – this goes great with ginger ale. Garnished with apple, of course.

Nose

Soft and fruity with gentle juniper pine and spice. Sweet citrus and apple blossom bloom, joined by bunches of green leaves and baking spice. Sharp apple notes develop – complete with bitter pips – all balanced by the sweetness of the citrus and a hint of berry jam.

Palate

The citrus leads, with sweet fruit and buttery spice close behind – cinnamon toast with apple jam. Candied lemons and pine needles build, joined by a touch of apple skin bitterness, sweet juice and berry compote.

Finish

Lingering spice and sour fruit.

50ml Cornerstone Rare Cornish Gin

Light Premium Tonic

Method

Ice in the glass then pour Cornerstone Rare Cornish Gin, squeeze two and top with a light Premium Tonic Water.

Serve

Collins glass

Garnish

Sliced apple and fresh mint.

Avian Sandercock

Minder of the stills, conductor of experiments, flavour obsessive and chief geek. If you have drunk anything made by Wrecking Coast, you have Avian to thank for pressing the buttons, pulling the levers, shovelling ingredients, and probably for putting it in the bottle.

Outside the shed

Craig Penn

Head salesman, arbiter of design, one-man online team and chief taste-tester. If you have held a bottle from Wrecking Coast in your hands, then you have Craig to thank for both how it looks and for extracting it from the Cornish countryside and getting it to you.

In the beginning...

Buddies Avian and Craig have dabbled in drinks for years, although from the drinking side of the bar. Having lost his taste for beer, Craig turned to spirits.
